How To Make ‘Sattu Paratha’ At Home Ingredients For the Filling: Sattu (roasted gram flour) – 1 cup Onion – 1 small, finely chopped Garlic – 1 tbsp, finely chopped Ginger – 1 tsp, finely chopped Green chillies – 4–5, finely chopped Fresh coriander leaves – 1 handful, chopped Carom seeds (ajwain) – ½ tsp Lemon juice – 1 tsp Mustard oil – 1 tbsp Mango pickle masala – 1 tbsp Salt – to taste For the Dough: Whole wheat flour – 2 cups Carom seeds – 1 tsp Nigella seeds (kalonji) – ½ tsp Salt – a pinch Water – as required Step-By-Step Method Knead the Dough: In a large bowl, combine the wheat flour, carom seeds, nigella seeds, and salt. Gradually add water to form a soft dough. Cover with a damp cloth and let it rest for 10-15 minutes. Prepare the Sattu Filling: In another bowl, mix the sattu with onion, garlic, ginger, green chillies, coriander leaves, carom seeds, mustard oil, lemon juice, pickle masala, and salt. If the mixture feels too dry, add a few drops of water or oil until it binds nicely. Roll and Fill: Take a small portion of the dough and roll it into a circle. Spoon some of the sattu filling into the centre, seal the edges carefully, and roll it out gently into a paratha. Be cautious not to let the filling spill out. Cook on a Tawa: Place the paratha on a hot griddle (tawa) and cook until both sides are golden brown. Brush lightly with ghee or oil and fry until crisp and fragrant. Serve the Traditional Way: Serve hot Sattu Parathas with chilled yoghurt, onion salad, or spicy green chilli pickle.
