A new sushi spot has opened in a Cambridgeshire city offering "freshly made sushi and bento boxes". Chen Chai recently opened Modern Sushi, which is a food kiosk found in Peterborough's Queensgate Shopping Centre, providing visitors with "convenient and affordable" dishes. Mr Chai decided to open his own sushi kiosk using his many years of experience working at other fast food sushi brands. He said: "Nowadays a range of Asian cuisine is quite popular like Japanese and Korean food so I wanted to create my own kiosk to bring that into the shopping mall. I didn't see a sushi bar in the shopping centre. I think it's good for the customers to have a selection of places to eat here." Modern Sushi and Bento features a counter with freshly made sushi and a range of Japanese bento meals that are easy to take away. You can also pick up snacks such as tempura prawns, gyozas, and Korean fried chicken bites. Mr Chai added: "It's so easy for our customers to take with them, it's so convenient. It's much more affordable than eating in a restaurant but the quality is very high. I would say it is as good as having a meal in a Japanese restaurant. We use high quality ingredients and all of the fish is so fresh." Mr Chai would recommend new customers to try the sushi when they first visit, as it is "better than buying it from a supermarket". All of the sushi is prepared daily at the kiosk in front of you and placed on the counters. Modern Sushi is offering "unique" dishes compared to other sushi spots in the county, which Mr Chai believes will help it stand out. He added: "We've seen a lot of people pass by and they're getting excited to see a sushi bar in the area. They try our food and they say they can taste the difference so they seem to be liking it at the moment. The customers like being able to see what we are doing and how we make the fish." Mr Chai is hoping to expand the business into a bigger area in the future and would like to continue introduce new recipes to the menu. Modern Sushi can be found in Queensgate Shopping Centre on Long Causeway in Peterborough.
