From 25th October to 2nd November 2025, the city’s most iconic rooftop bar will embrace a vibrant new rhythm, bringing the bold flavours and festive warmth of Mexico to its contemporary skyline setting. Guests can expect modern plates infused with tropical vibrancy, agave-led cocktails crafted with flair, and that unmistakable AER energy — vibrant, stylish, and irresistibly alive.At the heart of Viva La Vida is Chef Jason Hudanish, a Miami-born culinary visionary and F&B consultant whose career spans over two decades across continents. Known for his expressive, ingredient-driven style, Chef Jason brings to Mumbai a contemporary interpretation of Mexican cuisine that honours its roots while embracing modern refinement. Having shaped restaurant concepts, designed menus, and helmed pop-ups across the U.S. and India, he has made a name for himself by translating culture into cuisine — crafting experiences that are as soulful as they are sophisticated. Each dish in Viva La Vida tells a story of colour, spice, and the shared joy of gathering around food.Complementing his creations is AER’s specially curated agave-forward cocktail collection, led by its talented mixology team. The menu shines a spotlight on Mexico’s finest tequilas and mezcals — from Clase Azul to Don Julio 1942 — alongside inventive house signatures like the AER Picante, reimagined with a Mexican twist.
