Two restaurants in Dublin and Galway have been added to the coveted Michelin Guide, marking some exciting new additions to the Irish food scene. The new additions include the recently opened Amai by Viktor in Dublin city and The Pullman, in the Glenlo Abbey Estate in Galway. Chef Viktor Silva opened the doors to his restaurant, located in a former shoe shop on Harry Street, to rave reviews in July this year as it introduced Brazilian fine dining to Irish soil. The Guide described the tasting menu as one that 'fuses Irish produce with South American flavours in dishes that are packed with interesting flavours and textures'. Meanwhile, The Pullman offers one of Ireland's most unique dining experiences situated in restored Orient Express carriages, with the Guide praising it as a 'memory-making experience' and serving food which 'shows off the best of Irish produce in beautifully balanced dishes'. This comes after six other Irish additions to the Guide this year, including Lena, Cush, Hera, Forêt, The Pig's Ear and Farmgate Lismore. These latest additions now bring it to a total of 110 Irish restaurants being featured in the Michelin Guide. This comes after the guide to Michelin Restaurant guide, which has become the gold standard for the finest restaurants over the years, has announced it is expanding into wines. The ranking guide is set to release a Michelin wine ranking, after already branching out into hotels in 2025.
