An island nation of just under one million residents east of Australia and New Zealand in the South Pacific Ocean, Fiji has long been associated with extreme luxury. The archipelago, made up of more than 330 inhabited and uninhabited islands, is home to endless luxury resorts that visitors from around the world visit for seclusion in the ultimate natural setting of white-sand beaches, turquoise waters, and lush rainforest. According to the Fijian government’s statistics, the 982,938 international tourists who came to the country in 2024 contributed more than $2.5 billion USD to the local economy in a wider shift in which ultra-high-net-worth individuals make up a larger percentage of total spend every year. The Fiji Airways business-class menu aims to recreate the restaurant experience As Fiji’s flag carrier and national airline, Fiji Airways is in the process of rolling out a new in-flight dining menu on several of its flights to the United States and Canada. The on-demand menu caters to luxury travelers and was designed to offer a restaurant-like experience. Travelers in business class can order from a range of daytime and breakfast items at any point throughout the flight. The food itself is designed to highlight the local cuisine and South Pacific flavors for which Fiji is known. The signature starter is a hamachi crudo with octopus and Fijian sea grapes, while the main dishes include a coconut chicken curry and grilled mahi mahi with prawn chili oil. Also known by names like dorado or dolphinfish, the latter is a type of premium white fish native to tropical waters and abundant around Fiji. The dessert dishes include a kumquat cheesecake — the small orange citrus fruit grows throughout the island — and salted chocolate crème with pistachio and caramelized banana. Drinks include juices made from more local fruit abundant to Fiji as well as wine pairings from New Zealand, Australia, and California. New Pacific Rim menu will be available on Fiji Airways flights to San Francisco, Vancouver Fiji Airways economy class, in turn, has a simplified menu that still highlights Fiji flair and is served during set lunch or dinner hours. Choices include coconut curry, chili-glazed chicken, or tofu vegetable fried rice. Breakfast offerings include dishes like pumpkin feta fritters, tomato shallot omelette, or mango honey maple pancakes. Exact dish availability varies by city of departure and direction of the flight. The airline’s signature business class menu is steadily rolling out on select routes through the fall. Along with Honolulu, those are the four North American destinations to which Fiji Airways flies. The longer distance (Nadi International Airport is 5,555 miles or an 11-hour flight from Los Angeles) allows for a greater variety and a more ambitious style of food than what can be served on shorter Fiji Airways flights to nearby Asian countries and Australia.
