Brunch is a beloved activity for many in Denver, and the city has no shortage of spots to go when you’re craving a boozy midday meal. But next year, a new brunch spot from Austin is moving in.
Paperboy, founded in 2015 as a food trailer, now boasts two popular brick-and-mortar locations in Austin. Its third will be at 3490 West 32nd Avenue in the West Highland neighborhood, marking the brand’s first expansion outside of Texas. The space was most recently home to Rooted Craft American Kitchen and Troy Guard’s FNG before that.
“Colorado has always felt like a second home — I’ve spent years snowboarding in Breckenridge and enjoying the outdoor recreation. Now, being able to share that lifestyle with my family while opening Paperboy’s location here in Denver is a dream come true,” says executive chef Pat Jackson in a press release announcing the news. “I’m incredibly excited to put down roots in Denver, not just as a chef, but as an active member of this inspiring food and beverage community, collaborating with local chefs, supporting neighborhood events, and finding ways to give back to the purveyors that make this city so special.”
Jackson, who met Paperboy founder Ryan Harms over a decade ago, has moved to Texas for the opening. “Our mission at Paperboy has always been to create meaningful connections by making great food and taking good care of people. West Highland feels like the perfect fit for Paperboy — it’s not only adjacent to downtown but it also embodies the tight-knit sense of community that inspired our journey from the very beginning,” Harms says.
The 3,000-square-foot space features 75 seats indoors, plus a 20-seat patio that’s perfect for people-watching in the neighborhood. Expect the design to include “lush greenery, natural textures, and curated artwork.” The menu will include “playful spins on nostalgic daytime favorites made with high-quality, locally sourced ingredients and house-made components,” such as Texas hash, migas, seasonal Pop-Tarts and Paperboy’s signature pancakes with brown butter. Speciality coffee drinks, cocktails, mocktails, local beer, and fresh-squeezed juices round out the beverage offerings.
