National Doughnut Day, celebrated every year on November 5, is the ideal excuse to indulge. If you haven’t tried making doughnuts at home, they are actually a super versatile (and surprisingly easy) treat to whip up in no time. Skip the yeast and hot oil; instead, opt for the oven or air fryer. You can enjoy them as your heart desires – glazed, filled with custard and cream or topped with sprinkles. For the health lovers, if you are trying to hit those daily protein goals, sneak in the internet’s two current favourites – cottage cheese and Greek yoghurt – into the recipe for that must loved tangy flavour and pillowy softness. Follow this recipe to make a yummy yet healthy doughnut recipe that can be recreated at home with a few pantry staples and simple techniques, that will have you skipping the bakery and always running to the kitchen each time the cravings hits. View this post on Instagram A post shared by BORED OF LUNCH (@boredoflunch) Ingredients: – 1 tsp – Vanilla extract – 220g – Fat-free Greek yoghurt – 200g – Self-raising flour – 1 tsp – Granulated sweetener – 1 tsp – Baking powder – 100g – Strawberry jam – 40g – Low-fat Butter – 40g – Castor sugar 1. To make this doughnut, dump in the vanilla extract, yoghurt, and egg in a mixing bowl. Give them a whisk till they are all mixed together. 2. Add the dry ingredients such as the flour, sugar and baking powder, and knead them together until you have a lovely big dough. 3. Divide the dough and shape it into 12–15 balls. The number of doughnuts will depend on your size preference. 4. Lay them out on a parchment paper and put them in the air-fryer at 200°C for about 10-12 minutes 5. Once cool enough to handle, make a hole in each doughnut. Fill a piping bag with the jam and pipe some jam into each doughnut. You can also just dip them into some melted dark chocolate as well. 6.
