Mad Egg co-founder Conor Sheridan raises $37m Series B funding round for his AI start-up Nory

The raise, one of the largest in the hospitality technology sector, takes the overall funding haul of his start-up, Nory, to $63m (€43.6m) since launching it five years ago.

Mr Sheridan’s London-based company plans to use the cash to speed up the development of AI assistants across its restaurant management system as well as scaling operations in the US market.

The funding round, which was led by the Swedish investment firm Kinnevik, comes a year after Nory raised a $16m Series A round, led by the US venture capital firm Accel.

Nory’s AI system covers inventory, payroll and HR. The company claims that it reduces restaurant operating costs by up to 20pc and increases profitability by up to 50pc.

It also claims to help restaurant operators save over 100 hours of admin per restaurant each month by automating other back office tasks such as business analysis, digital guest engagement, rota planning, procurement and finance.

Its AI platform, the company says, learns from historical operational and sales data to serve up AI-driven recommendations to frontline staff.

Nory’s customers in the UK, Ireland and the US include Black Sheep Coffee, the Jamie Oliver Group, the Azzurri Group and Dave’s Hot Chicken.

“At a time when hospitality is under pressure, we are putting restaurants back in control of their profitability and their destiny,” said Mr Sheridan.

“The future of hospitality isn’t robots or gimmicks. It’s AI that makes restaurants smarter, leaner and more profitable, with automation that frees teams up to focus on what matters: great food and even greater customer experiences.”

Mr Sheridan previously worked at Davy and Accenture before founding his own restaurant franchise, Mad Egg.

“Nory is rewriting the hospitality playbook,” said Jose Gaytan de Ayala, who led the investment for Kinnevik.

“As the sector faces rising costs and complexity, Nory stands apart as the only AI-native platform purpose built to help restaurants meet and overcome these headwinds. We were impressed by the strong customer feedback, which highlighted the quality of Nory’s platform and the meaningful return on investment it delivers for customers.

“With our support, Nory will go even deeper on AI and bring the next wave of innovation to restaurant owners in the UK and beyond.”
