Inside The 5 Best New Hotels Of 2025, As Chosen By The Michelin Guide

The Michelin Guide isn’t just about restaurants anymore—it’s also curating where you should rest your head after a Michelin-starred meal. This year, its inspectors named five extraordinary newcomers that represent the best new hotels in the world for 2025. The guide is launching the MICHELIN Key (a hotel equivalent of Michelin Stars) on a global level, and will soon announced awards in different hotel categories. These five hotels are its nomination for the ‘Opening Of The Year’ Category. Aman Nai Lert: Bangkok, Thailand For the first time since 1988, Aman has returned to Thailand, and it has done so with a flourish. Aman Nai Lert occupies a rare patch of greenery in Bangkok: the Nai Lert Park estate. With just 52 suites, each featuring sweeping windows or terraces, it’s the kind of discreet hideaway Aman loyalists expect. Dining ranges from omakase to a cigar bar, while wellness dominates two entire floors, including a Djokovic-backed detox program. Add curated cultural tours and a design that honors the Nai Lert family legacy, and you have Bangkok’s new crown jewel. The Burman Hotel: Tallinn, Estonia Tallinn’s Old Town has always felt like a fairy tale, and The Burman Hotel fits right in. With only 17 rooms, it delivers intimacy paired with indulgence: Amouage bath products, handcrafted mattresses, and high-tech room controls. Its spa features Japanese baths and jacuzzis, but the real surprise is its culinary weight: two Michelin-recognised restaurants plus Maison François, a pastry haven. Add a high-society gaming salon called the Bombay Club, and suddenly Tallinn feels like the most cosmopolitan corner of the Baltics. Collegio alla Querce, Auberge Resorts Collection: Florence, Italy Once a 16th-century palazzo and later a boarding school, Collegio alla Querce has been reborn as a Tuscan dreamscape. Think frescoed ceilings, centuries-old stonework, and even a preserved chapel-turned-lounge. Its showstopper suite, Residenza la Quercia, comes with dual living rooms and a terrace gazing straight at Florence’s Duomo. Guests can opt for vineyard tours, cooking classes, or artisan workshops before winding down at the Aelia Spa or in what was once the headmaster’s office, now a cocktail bar. Le Mouflon D’Or: Corsica, France High in Corsica’s chestnut forests, Le Mouflon D’Or is less hotel and more soulful retreat. Originally built in 1926, the property has been lovingly restored by its owners with antiques, found objects, and preserved architecture. Just 20 rooms (plus two stone cottages) ensure the atmosphere stays personal. The glass-roofed restaurant, where treetop sunsets are the main course, might be reason enough to go. A pool bar, fireside lounge, and plans for a spa make it a perfect mountain-meets-Mediterranean escape. Cheval Blanc Seychelles: Takamaka, Seychelles On the wild shores of Anse Intendance, Cheval Blanc has unveiled its latest island masterpiece. The 52 villas, each with a private pool, dissolve the line between indoors and outdoors. Dining spans six restaurants, from Japanese to Creole, with a flagship concept—Le 1974—at the center. The spa’s bespoke treatments and ritual rooms provide pure indulgence, while Le Carrousel, a whimsical kids’ club, ensures younger guests are equally occupied.
