Jess Patterson (21) from Newcarron, who has coeliac disease and a dairy allergy, knows all too well what it’s like growing up with severe food intolerances. After a lifetime of missing out on the freedom to tuck in at birthday parties, weddings and Christmas, Jess found many commercially available cakes and biscuits were an expensive let down, rather than a delight. Now, however, she’s turned those limitations on their head, creating a business that caters for people just like her. And better still, she supplies commercially, meaning every restaurant and café throughout the Falkirk area can to order cakes made in a professionally licensed, safe environment. What’s not sacrificed is design or taste Jess added: “The best compliment I have had so far was “but it tastes just like cake!” which is exactly what I wanted to create.” Launched on October 1 in a unit in Antonine House, Callendar Business Park, Jess is already taking orders, including her hugely popular Victoria sponge, red velvet cake and lemon cake. And after spending years perfecting her flavours and piping skills, Jess can personalise your cakes for almost any occasion, including gender reveals, hen parties, birthdays and Christmas. How safe is her kitchen? It’s a commercial kitchen set up, and is entirely gluten free, dairy free and nut free. Jess said: “As a person who asks a lot of questions about food to ensure it is safe, I totally understand what people need to know.” And as well as standard food hygiene certificates, she also has passed an advanced allergen test. Why now? There is no other similar commercial set up in the area, only individual gluten free suppliers. Jess wanted to create something that solved a problem she is all too aware of. “The feedback has been amazing, we have been inundated with inquiries and messages thanking us for setting this up, saying that people really don’t want to miss out so they love that we are so inclusive, baking to suit everyone’s needs,” said Jess.
