Located in the lobby of the 5-star St Regis Mardavall Mallorca Resort, Es Fum was awarded a Michelin star for the first time in November 2011. Despite the passing of time, the team hasn’t rested on its laurels, continuing to offer cuisine worthy of the accolade.

The restaurant’s decor exudes the charm of a bygone era, but its cuisine, led by chef Miguel Navarro, is characterised by innovative touches. The chef has worked at establishments such as El Celler de Can Roca in Girona, voted the best restaurant in the world in 2013. Chef Miguel Navarro and his team offer a “Petit Menu” and a tasting menu. Only the ingredients are specified when describing the dishes on the menu, ensuring that each offering will surprise diners.

The warm asparagus salad with crayfish and truffle vinaigrette, as well as the creamy sea urchin rice with red shrimp and pink grapefruit, evoke the flavours of Mallorca in summer, with savoury, sweet, and fresh notes. The presentation of the dishes is artistic and cheerful, revealing the planning behind them. Every bite is designed to be a sensory experience. Innovative cruising

Thoughtful details, such as the small chairs where ladies can leave their handbags, lend this luxurious restaurant its personality. Es Fum is a seasonal restaurant open only in the evening.

About Chef Miguel Navarro

Miguel Navarro was appointed Head Chef at Es Fum in March 2017. The 39-year-old was born in La Gomera ( Canary Islands ) and trained at the University of La Laguna in Tenerife. His professional career began with a stint at the renowned 3-star Martín Berasategui Restaurant in San Sebastián. He also worked in Girona at El Celler de Can Roca, voted the best restaurant in the world in 2013. Other places where he has worked include the Italian restaurant Piazza Duomo in Alba and Aurmendi in Larrabetzu (Basque Country). During brief stays in Hong Kong and New York, he refined his culinary skills and gained valuable experience. Among his most recent places of work are the Ritz-Carlton Abama (Tenerife), the 3-star restaurant Aqua at the Ritz-Carlton Wolfsburg, and the 3-star restaurant Lasarte in Barcelona.
