Whether they’re poached, fried or scrambled, eggs remain a cornerstone in virtually every kitchen across the UK, but incorporating just one common ingredient could elevate the delicious food to new heights, according to one chef. This incredibly versatile and beloved food item has been a constant presence in our diets for hundreds of years, yet there has been an ongoing debate about the best way to enjoy the food. Nevertheless, in a recent YouTube video shared by Chef Brian’s Kitchen, he revealed one household ingredient that he believes will transform scrambled eggs to new levels. Following the standard procedure of cracking the eggs into a bowl, seasoning with salt and then beating, he subsequently adds them to a pan that’s already coated with melted butter and oil. As he allows the eggs to scramble and cook for a minute or two, he then introduced the mystery ingredient, which turns out to be mayonnaise. Clarifying why the condiment represents such a vital addition to the meal, he explained that the solution lies in the science behind it: “Part of the learning of cooking is learning the science of it.” Breaking down precisely what makes the sauce such an essential component to the dish, he noted that it’s predominantly connected to how comparable mayonnaise actually is to the fundamental ingredients of scrambled eggs: “If you make homemade mayonnaise, it’s just egg yolks that are emulsified with some oil and it turns into mayonnaise. “So you’re really adding more of the same inside of these eggs so it all makes sense. But, what it does is it creates this unbelievable soft scramble like no other.” As he plates up the dish, he explains how the mayonnaise significantly enhances the moistness of the dish: “When people taste it, they are going to be like ‘wow, I had no idea eggs could taste this good’. Now you have a little trick that will up your game.” While Chef Brian has shared his top tip for enhancing scrambled eggs, many others have also offered their advice on how to elevate the dish. In a 2017 episode of MasterChef, Gordon Ramsay revealed how adding creme fraiche can take it to a “different level”. He said: “Here is where it goes to a completely different level. Take a tablespoon of creme fraiche. That gives a really nice creamy texture. More importantly, it stops (the eggs) from overcooking.”
