The Bilash on Cheapside in Wolverhampton city centre has retained its two AA Rosettes for another year following a successful inspection, as well as being listed in the AA Restaurant guide for 2026. An AA Rosette is an award for culinary excellence given to restaurants and hotels in the UK and Ireland, based on assessments by AA inspectors, with the awards on a rising scale from one to five rosettes, with five rosettes representing cooking that compares with the best in the world. Achieving a rosette is a significant accomplishment and indicates a high level of cooking skill, ingredient quality, and overall dining experience and owner Mo Khan spoke about what had gone into the inspection to ensure the restaurant kept its two Rosettes. He said: "The Rosettes give you an indication of the level of service and level of cleanliness and your hygiene rating, which are all important factors in the overall inspection as they will check to make sure you have a five star hygiene rating. "Other criteria are that your restaurant must look immaculate from the front and the interior to the kitchen, which they will inspect right after dining to ensure everything is up to the right standards, so nothing pre-cooked, the refrigeration is in good order, your salads look fresh and all your rice, naans and the way you cook are right. "The criteria even includes the washrooms and so you have to meet all of this before you get your Rosettes." Mr Khan said he was extremely proud to have the restaurant retain its two Rosettes and said it was great for a family restaurant from Wolverhampton to maintain that standard. He said: "To be able to this in Wolverhampton is great and while there are a lot of awards out there, these are ones you can't just enter or pay for. "When you get recognised by Michelin, the Good Food Guide, Hardens and the AA, that makes a statement as they're internationally recognised and we've been working hard for 45 years, so we must be doing something right. "We are still working hard and we're excited about our new Ala Carte menu, which has been a hit and was created when I found out we were going to be in the AA guide and felt it was a good way to celebrate 45 years."
